Prawn, chilli and tomato linguine

Another simple mid-week meal which is just 15 minutes from fridge to plate. This will become a firm favourite I’m sure.

Serves 2

Ingredients:

200g spaghetti

A good glug of olive oil.

2 generous handfuls of cherry tomatoes, halved.

2 generous handfuls of cooked king prawns, defrosted if frozen.

2 garlic cloves, crushed.

Juice and zest of 1 lemon.

Handful of chopped parsley.

Pinch of chilli flakes.

Salt and pepper to taste.

Method

Cook the spaghetti according to the packet instructions.

Meanwhile, heat the olive oil in a frying pan and sauté the tomatoes until they start to soften. Add the garlic and cook for another minute.

Add the prawns, chilli flakes and lemon, and heat through the prawns.

Toss the cooked spaghetti and parsley through the sauce, season to taste and serve with a cold, crisp glass of white wine.
